But sometimes a creamy treat is in order – like these. So I wanted to add at least one more dairy-free pop for my girl.
My girl, who also happens to LOVE any and all things cookie dough (remember these?).
These were easy to pull together and got two thumbs up – both for flavor AND for tasting just like cookie dough!
from Tasty Yummies
13.5 oz. can of full-fat coconut milk
3/4 c. any non-dairy milk
1/2 c. brown sugar
large pinch of salt
1 T. vanilla
mini chocolate chips (vegan, of course)
Place both milks, sugar and salt in a small saucepan and stir over a low heat until the sugar dissolves. Remove from heat, let cool for a bit, then stir in vanilla.
Place a layer of chocolate chips into the bottoms of your popsicle molds. Pour the milk mixture halfway up and freeze for 1-2 hours. Sprinkle another layer of chips and pour the remaining milk mixture in. Add your popsicle sticks at this point. Freeze for another 1-2 hours and sprinkle a final layer of chips on top. Freeze till solid.
To release the pops, hold molds briefly under hot water.
