granola is more versatile than you might think!
My love for granola is well documented on this little blog. It’s right up there with all things coffee, Ritz crackers and tahini. So when the folks at One Degree Organic Foods asked me to come up with some fun recipes using their new Supergrain granola, I couldn’t say yes fast enough!
One Degree Organic Foods Supergrain granola is available in select Costco stores and is SO delicious. Made with sprouted oat clusters, quinoa and chia seeds, it has that classic granola taste and crunch – basically perfect to add to any recipe!

so what did I come up with?
Though you probably enjoy granola in a bowl with milk, layered in a parfait (or popsicle), or simply eaten out of hand, I enjoyed the challenge of going beyond the basics!
that viral date bark was the perfect start!
Have you tried date bark yet? It’s a viral trend that actually lives up to the hype. Layers of dates, nut butter and melted chocolate – what could be bad? I personally can’t get enough of this snack and just knew that a sprinkling of crushed granola would be the perfect addition (spoiler alert: I was not wrong)!

Start by halving dates and laying them out in rows on a baking sheet. Cover with parchment paper and flatten with a glass, measuring cup or rolling pin.

Now for the fun part! Spread on your choice of nut butter (I used peanut butter that I warmed up to make it more spreadable) and top with crushed granola.


Drizzle with some melted chocolate and pop in the fridge. Once it firms up cut into bars and enjoy the MOST delicious, guilt-free snack ever!


energy bites are a staple in our house!
I knew that one of my recipes would be an energy bite or bar. These little guys are the MVP of my house, staving off hungry (and hangry) cravings when I might otherwise reach for a handful of cookies or candy.

Like most energy bite recipes go, this one’s extremely flexible and use minimal, simple ingredients. I combined granola, tahini, agave syrup and dried cherries and scooped the mixture into balls.

The combination of the chewy sweet cherries, crunchy granola and savory tahini is irresistible, just the thing I look for when those cravings strike! And the best part is that every component can be adjusted to your tastes (and what you have on hand).

granola butter (again)!
You may recall that I shared a recipe for granola butter not long ago. That recipe took the various ingredients used in granola and blended them all up. But I wondered what would happen if I just took granola and did the same.

I blended the Supergrain granola with some melted coconut oil till it was smooth and creamy.


So, so good – and even easier! That jar did NOT last long around here, as I was spreading it on anything and everything!

3 Easy Ways to Use Granola!
Ingredients
For the granola date bark:
- 20 medjool dates, pitted
- 1/2 cup peanut butter
- 1/2 cup crushed granola
- 3/4 cup non-dairy chocolate chips
- 1 - 2 teaspoons refined coconut oil
For the no-bake granola bites:
- 1 cup crushed granola
- 1/3 cup tahini
- 1 tablespoon agave syrup
- 1/4 cup unsweetened dried cherries
For the granola butter:
- 2 cups granola
- 3 tablespoons melted refined coconut oil
Instructions
Make the granola date bark:
- Line a sheet pan with parchment paper. Use a paring knife to split the dates lengthwise without cutting all the way through. Open up each date and lay cut sides up on your prepared baking sheet, in rows of 5 x 4. Cover the dates with another piece of parchment paper and use a flat bottomed cup to press down and flatten. Remove the parchment paper.
- Warm the peanut butter if needed so that it is easily pourable. Drizzle over the dates and use a small angled spatula to spread completely over. Cover with the chopped granola.
- Melt the chocolate chips with 1 teaspoon of the coconut oil, adding more if needed until the chips are easily pourable. Drizzle over the granola. Freeze till firm, then use a large knife to cut into pieces. Store in an airtight container in the fridge or freezer.
Make the no-bake granola bites:
- Line a baking sheet with parchment paper.
- Combine all of the ingredients in a medium bowl, then use a small cookie scoop to scoop the mixture onto your prepared baking sheet. Freeze until firm; keep stored in an airtight container in the freezer till ready to serve.
Make the granola butter:
- Place the granola and 2 tablespoons of the melted coconut oil in a food processor. Blend till smooth, scraping down the sides occasionally. Once the granola butter is smooth, check for consistency. If too thick, add the remaining tablespoon of melted coconut oil, a bit at a time, till the desired consistency is achieved. Transfer to an airtight container and store in the fridge.
