fluffernutter ritz sandwiches – why did I wait so long?
Fluffernutter Ritz sandwiches were kind of inevitable. I suppose it just took me having some leftover marshmallow and a box of Ritz on-hand at the same time.
Which actually happened.
I made these delish vanilla bean marshmallows for a client and had about half the pan left over. I couldn’t help but think how cute they’d look cut into circles, and well, one thing led to another.
“Another” being peanut butter frosting.
Because after sugary things like marshmallows and meringues, and after Ritz crackers, I do love my PB frosting.
And fluffernutter? We go way back (popsicles cookie bars hamantaschen).
Wowsa.
In thinking about this month I want to share just a bunch of fun recipes, DIYs and gift ideas, so what better way to kick things off than these sandwiches?
For the marshmallows:
3 envelopes unflavored gelatin
2 cups granulated sugar
3/4 cup light corn syrup
1/2 teaspoon salt
1 vanilla bean, halved (or 2 teaspoons vanilla extract – have you made your own?)
confectioner’s sugar
For the peanut butter frosting:
1/2 cup peanut butter
1/2 cup confectioner’s sugar
Ritz crackers
Make the marshmallows: Coat a 9″ x 13″ pan with cooking spray. Line the bottom with parchment paper and spray the paper too.
Put 1/2 cup cold water in your mixer bowl. Sprinkle the gelatin over the water and set aside.
Combine the sugar, corn syrup, salt and 1/2 cup water in a saucepan. Stir over medium heat until sugar has dissolved. Bring to a boil and cover; boil for 5 minutes. Remove the lid and insert a thermometer – continue boiling till the temperature reaches 240 degrees. Remove pan from the heat.
Turn the mixer to low speed and slowly pour the hot syrup over the gelatin mixture. Increase the speed to high and beat for 5 minutes. Scrape the seeds from the vanilla bean and add to the mixture (don’t discard the bean!). Beat for another 3 minutes. Scrape the marshmallow into your pan and use an angled spatula that’s been sprayed with cooking spray to smooth the top. Let cool completely.
Sprinkle a cutting board with confectioner’s sugar. Turn the marshmallow out onto the board and sprinkle the top with more sugar. Place additional sugar in a bowl. Spray a cutter or glass (about the size of a Ritz cracker) with cooking spray and cut out circles. Coat the sides with additional sugar (marshmallows can be stored in an airtight container at room temperature for up to 5 days).
Make the peanut butter frosting:
Beat the peanut butter and confectioner’s sugar together till fluffy – store in the fridge till ready to use.
Make the sandwiches: Spread half the crackers generously with the peanut butter frosting. Place on a baking sheet and keep in the fridge. Working with one marshmallow at a time, torch all around and place on the remaining crackers. Sandwich both halves together and serve.
