Oh what a time 2020 was – in the food world I think we can agree that it was defined by a few viral trends:
- banana bread
- sour dough starters
- pancake cereal
- cloud bread
And Dalgona coffee. Yes, I succumbed to this one – and even tried a popsicle version AND the candy it inspired.

What trends did you take on that year?

As this summer’s heatwave shows no signs of letting up, Elizabeth and I decided to do another no-bake recipe for our “Sweet Treats for your Sweet Tooth” series. And I think you’re going to love this take on Dalgona coffee!

If you’ve tried the OG version you know that it whips up into a stiff, almost meringue-like texture, using only instant coffee, sugar and hot water. Though most commonly served in a glass filled with ice and milk, I also turned it into a popsicle (as I do).

Dalgona mousse also contains sugar and instant coffee, but you add ice instead of hot water, and mix it up in a food processor (or blender).

The result? A lighter-than-air coffee treat that is truly “mousse-like”!

how do you serve Dalgona mousse?
I was surprised at just how light and airy this was, and while I was spooning the first batch of it into my mouth I was thinking of the best way to serve it up. And my favorite way by far is in a bowl alongside some freshly whipped cream.
The heavier texture of the whipped cream offsets the airy mousse, and the flavor combo is truly perfection.

But I didn’t stop there.
One of my loveliest clients – Selefina – recently invited me to create a custom spice blend for them and it was such an exciting project to work on! It’s called “Spicy Baking Blend” and is a combination of ground ginger, cardamom, nutmeg, cloves, allspice and Himalayan sea salt. I knew it would add just the right touch of flavor to the mousse and it came out perfectly!

Dalgona Mousse
Equipment
Ingredients
- 2/3 cup ice cubes
- 2 teaspoons instant coffee, regular or decaf
- 3 tablespoons sugar, brown or white
- 1/4 cup cold water
- 1/2 teaspoon Spicy Baking Blend, plus extra for dusting
- freshly whipped cream
Instructions
- Place the ice cubes, coffee, sugar, water and 1/2 teaspoon of Spicy Baking Blend into your food processor. Blend till pale, thick and creamy, which will take 3 - 5 minutes. Serve immediately with freshly whipped cream and a dusting of Spicy Baking Blend.
Notes
- You can use a blender in place of the mini food processor.
- Do not substitute ground coffee for the instant coffee; the results will not be the same.
