dalgona coffee is the 2-ingredient treat you need to whip up right now!
As I’ve been wont to do these last few weeks, I find myself scrolling Instagram even more than ever. And one post has been popping up with increasing frequency – it’s a video of someone making Dalgona coffee.
Now you know me – it had me at “coffee” but I had no idea what I was looking at. Also known as “creamy coffee”, this 2-ingredient recipe is reminiscent of a popular Korean street food snack called Dalgona, made by heating sugar, oil and baking soda (kind of like a honeycomb candy).
You only need instant coffee, sugar and hot water, and some muscle if you’re hand-whisking (I used my mixer). The ingredients whip up into a stiff, meringue-like texture that is typically served over a glass of iced milk.

But you know how I feel about milk, so I spooned it over vanilla ice cream.

WOW. SO good! Kind of like an affogato, as the coffee flavor is very strong.
Talk about an easy recipe made from pantry staples! And you can jazz it up too, from what I’ve seen (I dusted a little cinnamon over this one). I think I’m going to try scraping a vanilla bean in next time, and maybe swap the coffee for cocoa powder?

2 tablespoons instant coffee (regular or decaf)
2 tablespoons granulated sugar
2 tablespoons HOT water (must be hot to whip up properly)
cinnamon, vanilla extract, a scraped vanilla bean (optional)
Place ingredients (plus mix-in if using) in a medium bowl and use a mixer to whip till lightened in color and stiff. This should take no more than a couple of minutes. You can also whisk by hand!
Spoon over a glass of iced milk or some vanilla ice cream.
