Back to school is HERE, and I don’t know what I did before discovering this recipe-that-isn’t-even-a-recipe:

  • three ingredients
  • 1 bowl
  • less than 10 minutes prep time
  • no bake
  • 1000000000% adaptable!

what is in these must-make bars?

Did you see how adaptable they are? This is a truly sky’s the limit situation, and perfect for whatever you have lying around. But the basic ingredient list is:

  • any nut or seed butter
  • any liquid sweetener
  • any cereal

how do you make three ingredient cereal bars?

Did you see the “less than 10 minutes prep”? Seriously. All you do is melt the nut/seed butter and sweetener in a bowl, mix in the cereal, and press into a pan. Chill or freeze, cut into bars and serve!

These bars are more delicious than they should be for how easily and quickly they come together. They travel and keep well, and are satisfyingly guilt-free. Perfect for mid-morning, lunchboxes and afternoon hangry-staving too.

what nut/seed butters can you use?

I love tahini or almond butter, but peanut butter and sunflower seed butter work perfectly too!

what kind of sweetener do you recommend?

I almost always use honey in this recipe. But you can swap it for maple syrup, brown rice syrup, molasses or agave syrup. Just be sure to taste before adding the cereal, and adjust if/as needed.

is this recipe vegan? gluten free?

Yes to both – depending on what you use! Many vegans avoid honey, so you would use an alternative sweetener in that case. And if you use a GF cereal then you’ve got a perfect gluten free snack!

what cereals work best in this recipe?

ANY! I will typically use whatever open box I have on-hand, as opposed to buying a box just for this recipe. Since you only need 3 cups this is perfect for using up leftover cereal. And I’ve yet to try one that doesn’t work – Chex, cornflakes, Cheerios, even quick oats all turn out great!

can you incorporate toppings or mix-ins?

Of course! Obviously it’s now no longer 3 ingredients, but who’s going to argue? I keep it simple and add a sprinkling of flaky sea salt, but this is one of those snacks that lends itself to add-ins. Chocolate chips, dried fruit, chopped nuts – throw in a handful of whatever you like!

Three Ingredient Cereal Bars

Ingredients
  

  • 1 cup tahini
  • 1/2 cup honey
  • 3 cups cornflakes
  • flaky sea salt for sprinkling, optional

Instructions
 

  • Line an 8" x 8" square pan with parchment paper, leaving an overhang on all sides.
  • Place the tahini and honey in a large heatproof bowl and heat in the microwave or over a pan of simmering water until the tahini and honey are melted. Stir to combine.
  • Add the cereal to the bowl and stir to coat well. Pour into your prepared pan and use slightly damp hands to press firmly and evenly. Sprinkle with the salt (if using) and place in the fridge or freezer to set.
  • Use the parchment to transfer to a cutting board and cut into 16 squares. Store in an airtight container in the fridge or freezer.

Notes

  1. Swap the tahini for any nut or seed butter.
  2. Swap the honey for maple syrup or another liquid sweetener.
  3. I use an 8 x 8 pan but any size or shape will work!
  4. When using tahini I suggest keeping these bars in the freezer for the firmest texture. Almond or peanut butter bars can be stored in the fridge.
