You know how much I love love love tahini – it’s not only delicious but provides a savory note to baked goods that complements the sweeter ingredients so beautifully. And the oats give a texture and crunch that is just irresistible!

These easy one bowl cookies take a cue from classic chocolate chip cookies, using very similar ingredients. What makes them extra special is the tahini filling – soooo good:

how do you make them?

The cookie dough is an easy recipe, made in one bowl, scooped onto a baking sheet and chilled. The filing is whisked by hand and chilled as well (this makes it easier to scoop onto the cookies). Bake up the cookies, cool, fill, sandwich and serve!

can you make these cookies gluten free?

Yes - a cup-for-cup gluten free flour will work beautifully here, as there is less than a cup in the recipe. You could even grind up enough oats to make an oat flour, if you like!

can you substitute another sweetener for the honey?

Yes - maple syrup or agave would both work nicely in place of the honey.

can you make these in advance?

Yes - there are several ways to make this recipe 'do-ahead'. You can keep the scooped, unbaked cookies and the filling covered in the fridge for a few days. You can bake the cookies, freeze them and then make the filling when you want to serve them. Simply defrost the cookies and fill! Finally, you can even assemble the cookies, wrap and refrigerate up to 5 days in advance!

are these cookies vegan?

Sadly, no - the butter makes these a 'not vegan' treat. I wouldn't substitute a dairy free spread for the butter here, as I think it would create a cookie that spreads too much in the oven.

can you use another seed or nut butter in place of the tahini?

Yes! Almond, peanut and sunflower seed butter - alone or a combination - can all be swapped for the tahini!

Ingredients
  

for the cookies:

for the filling:

  • 3/4 cup tahini
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon powdered sugar
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt

Instructions
 

make the cookies:

  • Line 2 baking sheets with parchment paper.
  • Beat the butter, tahini and both sugars. Beat in the egg and vanilla. Beat in the dry ingredients. Use a cookie scoop to drop onto one of the lined baking sheets - chill for at least 2 hours.

make the filling:

  • Whisk all of the ingredients till smooth - chill till ready to use.

bake the cookies:

  • Preheat the oven to 375 degrees.
  • Divide the cookies between the 2 baking sheets so that they are evenly spaced. Bake for 12 minutes or till golden brown. Cool on the pans on a wire rack for 10 minutes, then transfer to the rack to cool completely.

assemble the cookies:

  • Turn half the cookies upside down so that the flat sides are facing up. Scoop a scant tablespoon of filling onto the flat sides of the cookies, then top with the reserved cookies, pressing down gently. Chill till ready to serve.
