You know how much I love love love tahini – it’s not only delicious but provides a savory note to baked goods that complements the sweeter ingredients so beautifully. And the oats give a texture and crunch that is just irresistible!
what is in tahini oat sandwich cookies?
These easy one bowl cookies take a cue from classic chocolate chip cookies, using very similar ingredients. What makes them extra special is the tahini filling – soooo good:
flour
baking soda
baking powder
oats
kosher salt
unsalted butter
tahini
granulated sugar
brown sugar
egg
vanilla
powdered sugar
honey
how do you make them?
The cookie dough is an easy recipe, made in one bowl, scooped onto a baking sheet and chilled. The filing is whisked by hand and chilled as well (this makes it easier to scoop onto the cookies). Bake up the cookies, cool, fill, sandwich and serve!

Tahini Oat Sandwich Cookies

Ingredients
for the cookies:
- 9 tablespoons unsalted butter, at room temperature
- 1/4 cup tahini
- 1/4 cup + 2 tablespoons granulated sugar
- 1/3 cup packed brown sugar
- 1 large egg, at room temperature
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3/4 cup rolled oats
- 1/4 teaspoon kosher salt
Instructions
make the cookies:
- Line 2 baking sheets with parchment paper.
- Beat the butter, tahini and both sugars. Beat in the egg and vanilla. Beat in the dry ingredients. Use a cookie scoop to drop onto one of the lined baking sheets - chill for at least 2 hours.
make the filling:
- Whisk all of the ingredients till smooth - chill till ready to use.
bake the cookies:
- Preheat the oven to 375 degrees.
- Divide the cookies between the 2 baking sheets so that they are evenly spaced. Bake for 12 minutes or till golden brown. Cool on the pans on a wire rack for 10 minutes, then transfer to the rack to cool completely.
assemble the cookies:
- Turn half the cookies upside down so that the flat sides are facing up. Scoop a scant tablespoon of filling onto the flat sides of the cookies, then top with the reserved cookies, pressing down gently. Chill till ready to serve.
