This dish couldn’t be easier to make and is a perfect recipe for this transitional time of year, as we’re heading out of winter but not quite into warmer temps yet.

You’ll start by coating boneless chicken breasts in a mixture of parmesan, panko, olive oil and chopped parsley.

You’ll then roast the chicken in a high-heat oven till the panko turns golden brown. I love this approach because it results in a really crunchy coating without the mess or calories of stove-top cooking. While the chicken is in the oven you’ll whisk up the dressing and halve the romaine hearts lengthwise. The romaine goes onto the sheet pan with the chicken and everything continues to cook till the chicken is cooked through and the romaine is crisped around the edges.

And it’s that quick and simple! Serve with lemon wedges and your dressing; the tanginess is the perfect complement to the warm chicken and romaine.

Yes! Simply use gluten-free panko breadcrumbs or any gluten-free breadcrumbs that you like – you could even make your own from your favorite GF bread.

can I use chicken thighs in place of breasts?

Yes again! We prefer chicken breasts around here but boneless skinless thighs will work beautifully.

what should I serve with this dish?

The beauty of this recipe is that it really needs no accompaniment – you’ve got your protein and greens all on one plate! That said, a light rice like Basmati would be nice alongside if you like.

Ingredients
  

  • 1 1/2 pounds skinless boneless chicken breasts, butterflied if very thick
  • 1/2 cup grated parmesan, plus extra for serving
  • 1/2 cup panko breadcrumbs, regular or gluten-free
  • 9 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons chopped flat-leaf parsley
  • 2 garlic cloves, minced, divided
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 1/4 cup fresh lemon juice
  • 2 large romaine hearts, halved lengthwise
  • salt and pepper
  • 1 lemon, cut into wedges

Instructions
 

  • Pre-heat the oven to 450 degrees. Season the chicken with salt and pepper and place on a  parchment-lined baking sheet. Combine the parmesan, panko, 2 tablespoons of the oil, parsley and 1 garlic clove in a medium bowl - season with salt and pepper. Pat the mixture onto both sides of the chicken and roast until the crumbs begin to turn golden, about 10 minutes. Wipe out the bowl.
  • While the chicken is roasting place the mustard, mayonnaise, lemon juice and remaining garlic clove in your wiped-out bowl and whisk to combine. Slowly whisk in 6 tablespoons of the olive oil till the dressing is emulsified. Season with salt and pepper.
  • Drizzle the romaine with the remaining 1 tablespoon of oil - season with salt and pepper. Place around the chicken and continue roasting until the chicken is cooked through and the romaine is browned at the edges, about 5 minutes.
  • Serve the chicken and lettuce with lemon wedges, passing the dressing and extra grated cheese separately.
