So TikTok food trends, amiright?
It’s hard to keep up! And frankly, most I just want to pass on by. That said, I DID partake in Dalgona coffee (and even turned it into a popsicle), as well as baked feta pasta (sooooo good). I even made Sprite pie!
So how – HOW – did I miss pesto eggs?
It’s pesto and eggs for Pete’s sake!
Seriously, I had to share this and you HAVE to make it.
All you need is – you guessed it – pesto and eggs!
This is one of those “how did I not think of this???” hacks that will have you shaking your head long after you’ve cleared your plate.
Simply swap your cooking oil for pesto.
That’s it.
This is the perfect recipe for when I’m eating alone and want an upgrade from my usual solo dinner. The first time I made it I served it over a sliced avocado. And the next time it was over some toast. I’ve shown it here with some lime tortilla chips, and I’m DYING to try it over some good ricotta cheese, so hopefully THAT will be happening soon.
But however you do it, be sure to drizzle a little honey over and finish with a bit of flaky sea salt.
This works with eggs cooked any way you like – I’m an “over easy” girl but I’ve seen it made with scrambled and sunny side up.
