made that baked feta pasta that went viral on tiktok and it did NOT disappoint!
Yes, THAT baked feta pasta.
I’m doing a quick “TikTok” mini series this week as I’ll be gearing up for Passover next week and need to get in all the carbs before then.
I admit it – I’m addicted to food hacks on Reels and TikTok, especially ones that go viral. And if the flavors appeal and it looks easy enough for anyone to execute, I feel compelled to give ’em a try. And share them here with you!
So this baked feta pasta has gone absolutely bonkers on TikTok, though the original recipe is actually two years old – and originated in Finland of all places! Food blogger Jenni Häyrinen (@liemessa) posted the dish (called “uunifetapasta”) in 2019, and the response was so huge that local supermarkets started running low on feta.
The recipe’s popularity saw a second wave courtesy of TikTok, and looked like just kind of recipe I love to post here.
Verdict? It’s delicious and insanely easy (five ingredients!).
There are dozens of variations to be found online but I am perfectly content to serve up the OG recipe on the regular.
Have you made uunifetapasta?
original recipe from liemessa, variations abound
2 pints cherry tomatoes – I did a mix of half “on the stem” and half heirloom grape tomatoes for color
1/2 cup olive oil
8-ounce block of feta cheese
2 cloves garlic, crushed
salt and pepper
12 – 16 ounces pasta of choice (I love cavatappi)
Pre-heat the oven to 400 degrees Place the tomatoes and oil in a baking dish that is large enough to hold them in a single layer, snugly. Toss to coat create a space in the center for the feta. Turn the feta a few times to coat with the oil, add the garlic cloves and season with salt and pepper. Bake for 30 minutes.
While the dish is baking, prepare the pasta according to package directions, cooking till al dente.
After the cheese and tomatoes have baked for 30 minutes raise the oven temperature to 450 degrees and cook for an additional 5 – 10 minutes, until the feta is nicely browned. Remove from the oven.
Drain the pasta and add to the baking dish, tossing to break up the feta and coat the pasta evenly. Add salt and pepper to taste and serve immediately.
