Oh, bourbon. You go well with so many things (aside from ice)……
You go well with malt. You go well with bacon.
And you also go well with butterscotch.
And coffee.
While I don’t mind fussing over my pops, sometimes it’s nice to simply whisk together some ingredients, pour into the molds and freeze ’em up.
This is one of those times!
These are delectable – sweet and smoky, with a hit of salt and delightful coffee flavor throughout. A true “grown-up” popsicle if there ever was. And much like my pumpkin spice latte pops and hot cocoa pops, a perfect pop for fall!

2 cups strong coffee
1/2 cup heavy cream
2 tablespoons butterscotch sauce
2 tablespoons maple syrup
pinch of kosher salt
1 tablespoon instant espresso powder
2 – 4 tablespoons bourbon
Place all ingredients except the bourbon in a large heatproof measuring cup – whisk to combine well. Microwave for 30 seconds and whisk again. Add bourbon to taste.
Pour mixture into your molds and freeze for 2 hours. Add popsicle sticks and freeze overnight. To release the pops, hold molds briefly under hot water.
