Latke cookies are delicious little treats that look like latkes but are actually crispy-chewy cookies that are perfect for Hanukkah!

once I saw a recipe for latke cookies I couldn’t get them out of my mind!

A few months ago a Food52 post for something called “latke cookies” caught my eye (I mean, wouldn’t you be curious?). I’ve been making latkes every year for Hanukkah for over 30 years but never once thought to make them into a cookie. So I clicked.

that latke cookies recipe was not at all what I thought it would be!

The recipe was different, to say the least. Consisting of simply 4 ingredients – sweetened condensed milk, salted butter, egg and Ruffles potato chips, these reminded me of the cereal clusters I shot for a client a while back. I imagined that the salty-sweet combo of the condensed milk with the potato chips would be delicious, but: a) they didn’t really look like cookies, and b) they definitely didn’t look like latkes.

I was inspired!

Now don’t get me wrong – I’ve done plenty of “riffs” on traditional recipes (see: buffalo chicken pizza, s’mores hamantaschen and apple pie muddy buddies), and one of my favorite things to do is take creative license when doing so. And I almost grabbed the ingredients needed to make these treats. But what I REALLY wanted to make was a cookie that looked like a latke.

Coconut macaroons are not typically served for Hanukkah – they are firmly in the camp of Passover treats. But I just knew that shredded coconut would perfectly mimic the craggy edges of potato latkes, and give me the effect I was looking for.

Lucky for me I have an easy, delicious macaroon recipe that – with a few tweaks – was just what I had in mind.

what’s in latke cookies?

My latke cookies are made from just 5 simple ingredients:

  • egg whites
  • sugar
  • shredded coconut
  • salt
  • almond meal

how do you make them?

You’ll start by whisking the eggs and sugar till frothy, and then adding in the rest of the ingredients. Scoop into mounds on a baking sheet and then flatten them with a damp hand. Traditional macaroons have a rounded shape, but to get that “latke look” you want to flatten the cookies prior to baking.

Bake them up, cool and serve!

what do they taste like?

I was never much for coconut till I had to toast some up for a recipe. GAME. CHANGER. The taste and texture of baked coconut is completely different and so delicious – crispy, sweet, so so good! And that’s the best way to describe these latke cookies. Crispy edges with slightly chewy centers and a coconut-y flavor.

these cookies are gluten free (but don’t have to be)!

I happened to have almond meal on hand, which I used for this recipe – I loved how the brown specks helped to even further create that latke-like appearance. It also made the cookies gluten free. That said, use literally whatever flour you like – all purpose, a gluten free blend or almond flour all work here! You just need a little bit to help bind the ingredients and keep the cookies intact when they bake.

Latke Cookies!

Ingredients
  

  • 2 large egg whites, at room temperature
  • 1/4 cup granulated sugar
  • 2 tablespoons almond meal
  • 1/4 teaspoon kosher salt
  • 2 cups sweetened coconut flakes

Instructions
 

  • Pre-heat the oven to 325 degrees. Line two baking sheets with parchment paper or Silpats.
  • In a large bowl whisk the egg whites and sugar till nice and frothy. And the almond meal, salt and coconut flakes and use a rubber spatula to fold in till well blended.
  • Use a cookie scoop to scoop mounds about 2" apart, dividing the batter between your 2 baking sheets. Use a damp hand to flatten each mound.
  • Bake for 7 - 10 minutes, till just starting to brown around the edges. Use a spatula to flip the cookies over, rotate the pan and bake for another 7 - 10 minutes, or till nice and golden brown.
  • Let the cookies cool on the pans for about 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature.

Notes

All purpose flour, gluten free flour or almond flour can be substituted for the almond meal.

    Im totally making these (keto,of course) Super easy to adapt .I know they will be delicious and will never look as good as yours 🙂
