As always, I strive to make all of my recipes – whether vegan, wheat-free or Passover-friendly – the kinds of recipes that anyone would want to make/eat/serve. Any time.
And Kathleen of Cat with A K Cooks does just that (have you made her paleo blondies yet?).
Once again, her latest post stopped me in my tracks, and had me scrambling for ingredients so I could make these oatmeal cookies immediately. And they were perfection. Deliciously crispy edges, with a soft chewy center, and the flavors were spot on – despite the ingredients being paleo.
These will be a perfect dessert, snack and breakfast cookie (and a welcome relief from what I call “matzo fatigue”, which typically hits by day 4 of the Passover week).
Head to Kathleen’s blog for the full recipe; the only changes I made were to swap raisins for unsweetened dried cherries and eliminating the coconut.
I LOVED how quickly and easily these came together, and am completely mystified at how Kathleen made these cookies into a healthier version without sacrificing a single thing! Let me know if you try them!
