If you’ve been reading this blog for any length of time, you know I have a serious sweet tooth. Cookies, cakes, meringues, I love it all. And while I certainly love a good caramel corn, even I often find it to be over-the-top sweet. Which is why I’m SUCH a fan of this buffalo popcorn recipe!

what IS buffalo popcorn?

Buffalo popcorn is caramel corn with the addition of powdered ranch dressing and buffalo sauce, which takes this basic recipe up several notches. Because if you’ve been reading this blog for any length of time you ALSO know that I love a good buffalo chicken – and more – recipe (see: pizza, cauliflower, totchos and tacos)!

what does it taste like?

You mean other than deliciously addictive? It’s like a perfect storm of sweet, salty, spicy and tangy, with the crunch from the popcorn and caramelized sugar. So. Darn. Good.

what ingredients do you need?

This is a blessedly simple ingredient list, only adding to the many reasons I love this recipe:

unpopped popcorn
granulated sugar
butter
buffalo sauce
powdered ranch dressing
baking powder
kosher salt

how do you make it?

You’ll start out by popping your corn – I’ve shared my favorite method in the recipe instructions. You’ll then cook the sugar with water to make caramel, add the remaining ingredients and toss it all with the popped corn. Spread on a baking sheet and bake in the oven for about 15 minutes. Once it’s cooled you can break it up and enjoy!

is this recipe gluten free?

Yes! All of the ingredients are naturally gluten free.

can you use already popped corn or microwave popcorn?

Yes to both - you want plain, unsalted popcorn so there are no competing flavors but either works if you don't want to pop your own!

how do you keep everything from sticking while you coat the popcorn?

The secret to keep things from sticking while you work is to liberally spray everything - the baking sheet, bowl and spoons - with non-stick cooking spray. This works perfectly!

Buffalo Popcorn!

Ingredients
  

  • 6 tablespoons popcorn kernels
  • 1 cup granulated sugar
  • 1/4 cup water
  • 3 tablespoons butter
  • 1/4 cup buffalo wing sauce
  • 1 tablespoon powdered ranch dressing
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt

Instructions
 

  • Pre-heat the oven to 300 degrees and line a baking sheet with parchment paper. Spray the parchment paper, a large bowl and two large spoons with non-stick cooking spray.
  • Place the popcorn kernels in a plain brown lunch bag and fold the top over a few times. Set the microwave for 3 minutes and lay the bag on its side. Listen carefully after about 2 minutes and remove when there are a few seconds between pops. Transfer the popped corn to your prepared bowl, discarding any unpopped kernels.
  • Cook the sugar and water in a medium saucepan over medium heat, stirring till the sugar is dissolved. Bring to a boil and continue to cook until golden brown (about 10 minutes, start watching after 5 – 7 minutes).
  • Remove from heat and add the butter and buffalo sauce, stirring till incorporated. Return to heat and cook for an additional 3 minutes. Remove from heat and add the powdered dressing, baking powder and kosher salt, stirring till incorporated.
  • Immediately pour the buffalo mixture over your popcorn. Use your two spoons to coat the popcorn and transfer to your prepared baking sheet. Bake for 15 minutes, stirring once or twice. Remove from oven and let cool, breaking up any large chunks.

  1. I used Yo Mama's buffalo sauce, which I absolutely love!
  2. Get cute-as-heck popcorn boxes here.
  3. If using already popped popcorn you'll need between 6 and 8 cups.
