Is it me, or does it feel like most dinner recipes are just a riff on the same thing that you’ve made time and time again?

It’s hard not to get into a rut, and fall back on the tried’s and true’s – especially if you’re strapped for time (#everyone) and/or have a picky eater to contend with (#EVERYONE).

So when a truly easy, crazy delicious and totally different recipe comes on my radar, I have to admit – I get a little excited.

The moment I saw this recipe – on the beautiful blog, Gal on a Mission – my mouth started watering and I had to make it that very week.

And I’ve made it several times since.

All the buffalo chicken flavors you love (and who doesn’t?), stuffed into taco shells, smothered with tons of cheese and BAKED.

I used my foolproof method for oven-baking chicken breasts and the rest came together in minutes.

Buffalo Chicken Tacos
lightly adapted from Gal on a Mission

1 – 1 1/2 pounds boneless, skinless chicken breasts, cooked and shredded (use this method or your own favorite)
4 ounces cream cheese, at room temperature
2 tablespoons butter
1/4 – 1/2 cup Frank’s Red Hot Sauce, plus additional to accompany
8 hard taco shells**
8 ounces shredded cheese

shredded lettuce, chopped tomatoes, sour cream to accompany (optional)

Pre-heat oven to 400 degrees – grease a small baking dish.

Heat the cream cheese, butter and hot sauce in a medium sauce pan, stirring constantly till cream cheese has melted. Add the chicken and stir to coat.

Place the taco shells in your baking dish and fill with the chicken mixture. Top with shredded cheese and bake till cheese has melted, about 15 – 20 minutes. Serve immediately, with accompaniments if using.

** This recipe will make 8 tacos –  the reason you see only 6 in the picture is that, as even the mildest red hot sauce is too spicy for Noah, I put some of the plain chicken aside for his meal.
