I wish I could remember where I originally saw this recipe for a no bake single serve “cookie”. But needless to say I was drawn to the idea of making a single cookie without turning on the oven! And as we are a small crowd around here I’m always looking for small batch recipes – and it doesn’t get smaller than a single serving!

Longtime readers know what a fan I am of cookies – they are tops on my favorite foods to make, whether we’re talking peanut butter cookies, chocolate chip cookies or meringues.
what’s in this no bake single serve “cookie”?
The original recipe called for creamy peanut butter and semi-sweet chocolate chips but I substituted (as I do!) as follows, using:
almond butter
quick oats
confectioner’s sugar
vanilla
white chocolate chips
flaky sea salt
how do you make them?
It doesn’t get easier than this. Simply combine all of the ingredients except for the white chocolate and sea salt. Form into a cookie and freeze on a piece of parchment paper (or wax paper). Once frozen you’ll melt the chocolate chips and spread on top of the cookie along with a sprinkle of flaky salt – the cold cookie instantly hardens the chocolate, which I loved. That’s it! You don’t even need a baking sheet!
it was really good, but………..
I can’t deny that I enjoyed eating this little creation. But other than it being round and looking like a cookie I would NOT call it one. It was more like a round, sweeter version of an energy bar in both taste and texture. Which is not to say it was bad. On the contrary! I just feel like the name is a little misleading (hence the quotes in the title).

Maybe? But I’m not rushing to do so. As no bake cookie recipes go I think I can probably do better. This took about 5 minutes to make so it’s not like it was time consuming at all, and again, it was very tasty. TBH I’d probably split the dough in half next time, to make 2 cookies, and shape each a little thinner too. I’m just not 100% sold on this one.

No Bake Single Serve "Cookie"
Ingredients
- 2 tablespoons almond butter
- 2 heaping tablespoons oats
- 1 teaspoon confectioner's sugar
- 1/4 teaspoon vanilla extract
- 1 tablespoon white chocolate chips
- flaky sea salt
Instructions
- In a small bowl mix all of the ingredients except the chocolate and salt. Form into a 2" circle and freeze on a piece of wax or parchment paper.
- Melt the chocolate in the microwave in 15 second intervals and spread on the cookie. Top with flaky sea salt.
Notes
- You can use any nut or seed butter in place of the almond butter.
- Semi-sweet or dairy-free chocolate chips can be used in place of the white chocolate.
- A teaspoon or two of mix-ins such as chocolate chips, raisins, nuts or toffee bits can be added to the dough.
