No Bake Single Serve "Cookie"

A cookie? Not so sure - but it IS single serving and very tasty too!

In a small bowl mix all of the ingredients except the chocolate and salt. Form into a 2" circle and freeze on a piece of wax or parchment paper.
Melt the chocolate in the microwave in 15 second intervals and spread on the cookie. Top with flaky sea salt.
- You can use any nut or seed butter in place of the almond butter.
- Semi-sweet or dairy-free chocolate chips can be used in place of the white chocolate.
- A teaspoon or two of mix-ins such as chocolate chips, raisins, nuts or toffee bits can be added to the dough.
