poached shrimp is SUPER easy!

I never knew how to make poached shrimp – or that I even needed to!

But I came across a recipe that used cold, cooked shrimp – kind of like a shrimp salad, but better (and coming soon it’s here!). I wasn’t quite sure how to prepare the shrimp, as I realized that my go-to methods – on the grill, in a skillet or in the oven – would not produce the desired results.

And THAT’S how I learned about poaching!

Poaching is simply placing the raw shrimp in just-boiled water for a few minutes, plunging them straight into an ice-water bath, and popping them in the fridge. This method produces shrimp that are beautiful in color, maintain their shape and are perfectly cooked.

I was so excited that I decided to also try my hand at shrimp cocktail (coming soon! – it’s here!) – something I’d also never made before and is also SUPER easy!

Poached Shrimp

large or jumbo shrimp, uncooked and deveined (tails can be on or off)

Bring a large pot of salted water to a boil. Take the pot off the heat, and once the boiling subsides, add your shrimp. Cover the pot and let sit for 4 – 7 minutes, depending on the the size and quantity of your shrimp.

While the shrimp are poaching, fill a large bowl with water and ice. Use a slotted spoon or strainer to transfer the shrimp to the bowl and let them cool completely. At this point you can serve them immediately or drain and refrigerate for up to 12 hours.
