mango salsa is super flavorful and SO easy!
You are going to LOVE this mango salsa!
I’m not a fan of straight-up tomato salsa. When combined with another ingredient – like in this peach version? Yes. But by itself, I don’t know – the texture, flavor, just never does it for me.
Now this mango salsa? I could eat it straight out of the bowl – it’s that good.
And did I mention that it’s SO easy?
All you really need for success are a super ripe mango and a few simple ingredients. I ramped up the flavor by adding a few drops each of Lemon and Lime oils, let it all sit for a few hours, and put it on EVERYTHING.
Serve it over grilled chicken, with corn chips for an appetizer, or added to a salad (you know, if you’re one of those who eat salad…).
Seriously, there isn’t anything that’s not made better by this salsa, but probably my favorite way to serve it is with fish tacos.

1 ripe mango, diced
2 tablespoons finely chopped red onion
zest and juice of one lime
2 tablespoons chopped mint leaves
3 drops Lemon essential oil
3 drops Lime essential oil
salt
Mix all ingredients except the salt in a bowl. Season to taste with salt and let stand for a few hours to allow flavors to develop.
