And this peach salsa is the perfect way to celebrate that bowl of peaches and tomatoes that is probably overflowing in your kitchen right now.
Fresh salsa couldn’t be – and SHOULDN’T be – any easier than this. Minimal prep, no-cook, and one bowl.
Feel free to increase/decrease ingredients, swap the cilantro for your fave fresh herb, up the onion, leave a few jalapeno seeds for heat, you get it!
I topped some grilled chicken breasts for dinner this week; leftovers make a fresh and unique dip for chips (drain any excess liquid before serving).
How do you use all of this lovely end-of-season produce?
2 peaches, diced
2 tomatoes, diced
finely diced red onion, to taste (I used about 1/4 a medium red onion)
finely diced jalapeno (seeds removed to eliminate heat)
juice of one lime
salt and pepper
2 – 3 tablespoons chopped cilantro
Combine all ingredients in a medium bowl, adjusting seasonings as needed. Let sit for 30 minutes before serving to allow flavors to develop.
