You know I love a good red, white and blue treat, and these cereal bar ice cream sandwiches did NOT disappoint.

Especially since I used cornflakes in place of rice krispies.

Because can we all just agree that we can do so much better than rice krispies? No disrespect but really – cornflakes are WORLDS better than rice krispies – from taste to texture. Especially in a marshmallow treat.

So let’s start with that.

And these sandwiches are as easy as making two thinner bars and putting some ice cream in between.

I dyed the marshmallow mixture after it was melted, and before I added it to the cereal, for a holiday themed dessert.

This makes 16 perfect little “bites” and would make a charming addition to your holiday celebration!

Cereal Bar Ice Cream Sandwiches
1 stick (4 ounces or 8 tablespoons) unsalted butter
10-ounce bag marshmallows
6 cups cornflakes
red and blue food coloring
pint of vanilla ice cream, softened

Grease two 8″ x 8″ pans; line the bottoms with parchment paper and grease again.

In a medium pot, melt half the butter over low heat. Once melted add half the marshmallows, and stir constantly till mixture is smooth. Add red food coloring till desired shade is reached.

Pour half the cornflakes into a large bowl and scrape the marshmallow mixture in. Stir till the cereal is well-coated, then transfer to one of your prepared baking pans. Use a greased spatula to gently but firmly press the mixture in.

Rinse and wipe the pot and bowl, and repeat with remaining butter, marshmallows and cornflakes, using the blue food coloring. Let cool completely.

Use a small thin knife to loosen the blue cereal bar from the pan – set aside. Line the empty pan in both directions with parchment paper, leaving overhangs on all sides. Invert the cereal bar back into the pan; peel and discard the parchment paper.

Scoop the ice cream on top and use an angled spatula to spread evenly. Remove the red cereal bar from the pan and place – right side up – on top of the ice cream layer. Press gently but firmly, cover with plastic wrap and freeze overnight.

Use your parchment “sling” to transfer to a cutting board. Cut into 16 squares; serve immediately or keep frozen till ready to serve.
