paleo brownies that actually taste amazing? yes, please!
You guys – these brownies are SERIOUSLY good.
I needed to make a dessert for a seder guest that can’t eat dairy, and I realized just how many treats in my repertoire contain butter and/or cream.
I wanted to make something that didn’t feel like the an afterthought or “less than” the other dessert offerings, and these brownies are IT.
Fudgy, full of flavor and dairy-, gluten- and refined sugar-free. Can you believe it?
And talk about easy. We’re talking ONE BOWL easy. Once the coconut oil is melted (in the microwave or in a heatproof bowl set over a pan of simmering water), you simply whisk in the honey and eggs, followed by the dry ingredients.
A note about the chocolate chips: first of all, they are totally optional. But I wouldn’t skip ’em. I like this brand, which I discovered during Chelsea’s vegan days, and they use cane sugar instead of white sugar. Don’t get me wrong, I’m not saying that cane sugar is any healthier, but it IS unrefined and therefore retains a few nutrients. Feel free to use what you have.
They also freeze beautifully, and I guarantee they will be met with approval by anyone who tries them!

1/2 cup refined coconut oil
1/2 cup honey
3 large eggs, room temperature
1/2 cup coconut flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon kosher salt
1/2 cup dairy-free chocolate chips
Pre-heat oven to 350 degrees; grease an 8″ x 8″ baking pan or line with parchment paper.
In a large microwave-safe bowl, melt the coconut oil. Cool slightly and whisk in the honey and eggs till smooth. Add the coconut flour, cocoa powder and salt – whisk again. Pour batter into your prepared pan and sprinkle with chocolate chips. Bake for 20 – 25 minutes or till firm to the touch. Cool in pan for 10 minutes, then remove from pan to cool completely on a wire rack. Cut into squares and serve.
