I love Mike Wazowski – and cookie truffles. So…………

Did you love “Monsters, Inc.”? I loved it. It was funny, and sweet and quirky – and how could you not love Mike Wasowski?

I was sorting through my stash of Halloween baking items and found an unopened jar of jumbo eyeballs and some green candy melts. So the idea for a “MW” treat came quickly. And of course as he’s mostly round, truffles seemed the obvious choice. I had a half block of cream cheese and a package of Biscoff cookies (from THIS CAKE), so cookie truffles FTW!

If you recall, I made a batch of cookie truffles way back when, and they are one of the more delicious and easy treats you can whip up. They work with any cookie you like (including gluten-free) or have on-hand, but this Biscoff version is delicious.

8 ounces Biscoff (Lotus) cookies
4 ounces cream cheese, slightly softened
1 cup green candy melts
large candy eyes
green sprinkles

shortening or vegetable oil, for thinning the melts (optional)

Place the cookies in a food processor and pulse till crumbs form. Add the cream cheese and pulse till evenly combined (mixture should start to ball up around the side).

Using a cookie scoop or tablespoon, scoop mounds onto a parchment lined baking sheet. Roll each mound into a smooth ball and chill till firm, about an hour.

Melt the candy melts in the top half of a double boiler set over barely simmering water. If you want a thinner consistency add a bit of shortening or vegetable oil.

Working with one truffle at a time, use a fork to roll evenly into the melts. Lift with the fork and rap on the side of the bowl to allow any excess to drip off. Return to your baking sheet, press an eye in and top with a few sprinkles. Repeat with remaining truffles; chill till ready to serve.
