I was working on a post for another site recently, which required the purchase of animal crackers.

Now – full disclosure here – I have never been a huge fan of these cookies. But something happened when I combined them with other ingredients, making them nothing short of delicious. The lightly sweet yet distinctive flavor was perfect, and the whole fam agreed that this was a game changer.

With #NationalAnimalCrackersDay looming (it’s TODAY, in case you were wondering), I was thinking about cooking up yet another fun, easy recipe.

These were SO good.

Just four super simple ingredients (and one of them is sprinkles!), these couldn’t be easier too.

Let’s kick Monday to the curb, shall we?

Animal Cracker Truffles

one bag of frosted animal crackers (10 – 15 ounces)
8 ounces cream cheese, softened
2 cups candy melts (I used one cup each white and pink)
assorted sprinkles

Line a baking sheet with parchment paper; set aside.

Blitz the animal crackers in your food processor – I processed them to a not-too-fine crumb, to keep a bit of crunch. Process them more if you want a smoother truffle.

Transfer the crumbs to a bowl and mix with cream cheese till well blended (either by hand or with a mixer). Use a small scoop or measuring spoon to scoop tablespoon-sized mounds onto your prepared baking sheet. Shape the mounds into balls, and refrigerate till firm.

Melt the candy melts (one color at at time if you’re using two) in the top half of a double boiler set over a pan of barely simmering water. Remove one truffle from the fridge and use a fork to roll it around in the melted candy till completely covered. Place on the fork and gently tap the handle on the edge of the bowl so that the excess drips off. Gently slide the truffle back onto your baking sheet and immediately top with sprinkles. Repeat with remaining truffles; keep chilled till ready to serve.
