favor-“ette”: a bacon tip

As I was making dinner the other night I realized I’ve never shared one of my favorite cooking tips of all time!

I mean, is there anything better than bacon?

No.

And is there anything more annoying than cooking bacon?

No.

This was a tip I learned literally decades ago, and it was a game changer. Oven baked bacon means no spattering, no greasy pan to clean, and – most importantly – perfectly flat pieces of bacon that are also perfectly cooked.

Oven Baked Bacon

1 pound bacon (or as much/as little as you need)

Pre-heat oven to 400 degrees; line 2 baking sheets with parchment paper.

Place the bacon on the bacon sheets so that they are lying flat and not touching each other. Bake for about 15 minutes or till brown and crisp, rotating the pans top to bottom halfway through.

Transfer to paper towels to drain; serve immediately.

    How do you reserve the grease? It is a cherished extra of fried bacon. And a must-have for many other southern dishes.

      I’ll be honest – I don’t reserve the grease. If I WERE to, I’d let it cool and strain it into a glass jar, discarding any strained bits, and store in the fridge. Since it will solidify when chilled, heat it up to liquify prior to adding your other ingredients to the pan.
