cookie jar: cranberry lime cornmeal cookies

With my new cookie packaging ready to go, I now needed four treats to put inside.

Of course, there were Fay’s butter cookies – because there will always be Fay’s butter cookies.

And my chocolate espresso cookies – a perennial favorite (and SO easy!).

For a non-cookie option I chose either a handful of bark OR some spiced walnuts.

And for the fourth?

I knew I wanted something a little less sweet. With a little bit of color. And maybe a fruit “leaning”.

And, like magic, my uber-talented pal Lindsey posted these cookies:

Perfect.

They were simple, quick and slice-and-bake easy. They were tender and light with a crispy-chewy texture, thanks to the cornmeal base and chopped cranberries.

Cranberry-Lime Cornmeal Cookies
from Cafe Johnsonia, who adapted the recipe from Everyday Food

12 tablespoons unsalted butter, room temperature
1/2 cup sugar
2 teaspoons vanilla extract
2 large eggs
2 teaspoons finely grated lime zest
2 cups flour, plus more for work surface
1 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dried cranberries, finely chopped

Cream butter and sugar in the bowl of an electric mixer till light and fluffy. Scrape down the sides. Add the vanilla, eggs and lime zest and beat again. Scrape down the sides. Add the flour, cornmeal, baking powder and salt. Beat on low till mixture is just incorporated. Fold in the chopped cranberries.

Transfer dough to a lightly floured work surface and divide in half. Shape each half into a log about 2″ in diameter. Wrap each log in plastic wrap and freeze till firm, at least one hour.

Pre-heat oven to 350; line four baking sheets with parchment paper. Slice logs into 1/4″ thick cookies (each log should yield about 48 cookies) and place 1/2″ apart on your prepared sheets. Bake for 10-12 minutes; transfer to a wire baking rack to cool completely.
