chinese new year at ruby foo’s!

Did you know that next Sunday (February 10th) is Chinese New Year? It’s the Year of the Snake and we’ll be celebrating at Ruby Foo’s restaurant in New York City:

Doesn’t this look like a great event? I was asked to review a recipe for the event, and immediately gravitated toward the pepper beef. Conor and I just now devoured our dinners, so I think I can safely say this dish is a hit!

Pepper Beef Ho Fun

8 oz. filet, cubed or sliced (I used beef round – you could use flank steak or filet mignon)
2 T. pepper sauce (such as Lee Kum Kee’s)
1/2 t. baking soda
8 oz. chow fun noodles (I couldn’t find actual chow fun noodles; I substituted with a wide cut noodle from our local Asian market)
1 oz. (2 T.) shiitake mushrooms, sliced*
2 oz. (1/4 c.) king oyster mushrooms, sliced*
1 oz. (2 T.) beech mushrooms, sliced*
1 T.  minced ginger
1 T. chopped shallots
1 T. chopped cilantro
1 T. basil, cut in chiffonade
1 T. thinly sliced scallions
2 T. minced garlic
2 T. minced chives
¼ c. low-sodium soy sauce
2 T. oyster sauce
½ c. grapeseed oil
salt and pepper to taste

Pat beef dry with paper towels. Combine with pepper sauce and baking soda and marinate for at least 15 minutes.

Prepare noodles according to package directions; drain and set aside. While the noodles are cooking, heat 1/4 c. of the oil in a wok or large skillet. Add the mushrooms, ginger, shallots, cilantro, basil, scallions, and garlic. Sauté for 2 to 3 minutes. Add the drained noodles, soy sauce, oyster sauce and chives, tossing to combine (I used my kitchen tongs for this). Transfer mixture to a large bowl.

Wipe out the skillet; add the remaining 1/4 c. of oil. When oil is hot add the beef (with any remaining marinade) and sauté till golden brown on all sides.  Season with salt and pepper.

Place the noodle mixture on a large serving dish; top with beef and serve.

*Note: don’t fret if you can’t find the mushrooms listed above. Any combination of your favorite mushrooms will work well.
