One of my favorite movies of all time is “The Wizard of Oz”. And my hands-down favorite scene is that moment when Dorothy steps out of the black-and- white farmhouse into full color Oz.
That scene has never grown old for me – to this day I still thrill to it as if I’m seeing it for the very first time.
I’ve been thinking about that scene a lot this week as we are on, like, day 5 of rain here. I desperately need a technicolor moment – so I’m making chicken fajitas.
This is a delicious dish, a staple in our house. It comes together quickly and easily, and adapts well to an infinite number of variations.
But for me, for today, it’s all about the colors. Bright green cilantro, yellow corn, purple onion and tri-colored peppers. It’s “Food Oz”.
And damn if I didn’t totally covet those shoes…………

1 each red, yellow and orange bell pepper, cut into strips
1 red onion, halved and sliced
2 T olive oil
1 1/2 lbs boneless chicken breast, seasoned with salt and pepper, grilled (or broiled) and thinly sliced**
1 t cumin
1 t chili powder
2 c fresh or frozen corn kernels
chopped cilantro, to taste
accompaniments: flour tortillas, shredded cheddar cheese, chopped tomatoes, yellow rice
In a large saute pan, heat oil over medium-high heat. Saute peppers and onion 10 minutes, stirring frequently. Add chicken, cumin, chili powder and corn – continue cooking till heated through. Season with salt and pepper and sprinkle with cilantro. Serve immediately with accompaniments.
** can substitute with flank steak or shrimp
