While I see a lot of posts about the struggle to come up with dinner ideas, for me it’s all about lunch. By the time lunch time rolls around I want something fast, filling, easy AND delicious. The challenge is ramped up further for me by the fact that – as a food photographer – my kitchen and work areas are typically covered with all manner of props, ingredients and utensils. So the idea of adding to the mix just to make lunch is enough to make me want to do nothing more than pour a bowl of cereal and call it a day.

I recently shared a recipe using Fishwife tuna. Now that I think of it I DID mention that it would make a great lunch so maybe I’m doing better than I thought?

Ingredients You’ll Need
To say this dish is completely customizable (save the salmon, natch) is an understatement. Here’s what I used for my delicious lunch bowl:
- Light mayo
- Sriracha
- Cooked brown rice
- Fishwife Smoked Atlantic Salmon
- Cucumber
- Red cabbage
- Seaweed salad
- Avocado
- Sesame seeds

How To Make It!
Step 1: Make the dressing
Whisk the mayo and sriracha together, adjusting for taste and consistency.



Step 2: Assemble your bowl!
In a shallow bowl layer your rice, followed by the salmon, cucumber, cabbage, seaweed salad and avocado. Drizzle with the dressing, sprinkle sesame seeds and dig in!

Ingredients
For the dressing:
- 3 tablespoons light mayo
- 1 - 3 tablespoons sriracha
For the bowl:
- 1/2 cup cooked brown rice
- 1 3.5- ounce can Fishwife Smoked Atlantic Salmon
- sliced cucumber
- thinly sliced red cabbage
- seaweed salad
- 1/2 ripe avocado, sliced
- sesame seeds
Instructions
Make the dressing:
- Whisk the mayo and sriracha together in a small bowl. Adjust the amounts till you achieve the desired consistency and level of spiciness. Set aside
Prepare the bowl:
- Spoon the rice into a shallow bowl. Add the salmon, cucumber, cabbage, seaweed salad and avocado. Drizzle some of the dressing over and sprinkle with sesame seeds.
