Let’s make ruby chocolate blondies!

did you know there’s a “fourth chocolate”?

I’ve been seeing recipes using a pink chocolate on my feed for quite some time now, and assumed they were made using either pink candy melts or tinted white chocolate. But recently a creator showed an unwrapped bar of something called “ruby chocolate” and I was CURIOUS.

what is ruby chocolate?

Here’s a little bio, from Food Network:

“In September 2017, scientists at the Swiss chocolate-making company Barry Callebaut announced the discovery of ruby chocolate, the first new chocolate development since Nestlé debuted white chocolate in 1930…Ruby chocolate is made from “ruby cacao beans,” which are found in Ecuador, Brazil and Ivory Coast…The candy’s photo-worthy blush color and unique flavor are a result of the ruby cacao bean’s fermentation process.”

what does ruby chocolate taste like?

I of course broke off a piece as soon as my bars arrived – I couldn’t wait to see what it tasted like. The best way to describe the taste is like a combination of white chocolate and strawberry. Yet the flavor and color are totally natural. I couldn’t wait to use it!

The timing was perfect because my friend Elizabeth of Pinecones and Acorns asked if I’d be interested in doing a monthly baking series together. As I was looking for a project after my “Milkbar Monday” series ended I couldn’t say yes fast enough. Elizabeth’s site is one of my favorites, filled with the best links and resources that she gathers up and shares with her readers.

sweet treats for your sweet tooth!

Elizabeth and I decided to pick one “sweet treat” each month and share our take on it – and our first recipe is the classic bar cookie!
Knowing that I wanted to use that ruby chocolate stat, it was a quick hop to land on ruby chocolate blondies. And they are SO good! They’re filled with lots of chopped white and ruby chocolate (along with some freeze dried strawberry powder), topped with my delectable streusel, and drizzled with more white and ruby chocolate. I couldn’t be more pleased with how these came out!

what ingredients do you need?

For these ruby chocolate blondies you’ll need:
butter
light brown sugar
granulated sugar
all purpose flour
kosher salt
egg
vanilla extract
baking powder
freeze dried strawberry powder
ruby chocolate
white chocolate

how do you make them?

Start by making the streusel, which is as easy as melting the butter and combining the rest of the ingredients till all the flour is absorbed. Pour onto a sheet pan and let sit while you prepare the blondie batter.

For the batter, you’ll brown the butter, let it cool a bit and add the remaining ingredients. Pour into a square baking pan, top with the streusel and bake. Once cooled, drizzle with melted white and ruby chocolate, let set and cut into squares.

Ruby Chocolate Blondies

Ingredients
  

For the streusel:

  • 4 tablespoons unsalted butter
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 3/4 cup all purpose flour
  • large pinch of kosher salt

For the blondies:

Instructions
 

Make the streusel:

  • Pre-heat the oven to 350 degrees. Line a baking sheet with parchment paper and an 8 x 8 square baking pan with parchment paper, leaving an overhang on all sides.
  • Melt the butter in a medium saucepan. Add the remaining ingredients and stir till all of the flour is absorbed and the mixture begins to clump. Pour the streusel onto your prepared baking sheet, spread into an even layer and break up any large clumps. Set aside.
  • Wipe out the saucepan.

Make the blondies:

  • Melt the butter in the wiped-out saucepan and continue cooking, swirling occasionally, till the bubbling subsides, the butter smells nutty and brown bits are visible on the bottom of the pan. Remove from the heat, pour into a medium mixing bowl and let cool for 5 - 10 minutes.
  • Add the brown sugar to the butter and beat till blended. Add the egg and vanilla and beat again. Add the flour, baking powder, salt and strawberry powder and beat till smooth. Add half the chopped ruby chocolate and half the chopped white chocolate and fold in.
  • Transfer the batter to your prepared baking pan and use an angled spatula to smooth into an even layer. Top with the streusel. Bake for 25 - 30 minutes till the edges are golden brown and a toothpick inserted in the center comes out clean or with just a couple of crumbs attached.
  • Cool the blondies in the pan on a wire rack.
  • Melt the remaining ruby and white chocolates in the microwave and drizzle atop the cooled blondies. Let set, cut into squares and serve.

Notes

  1. This recipe can be doubled and baked in a 9 x 13 baking pan. Increase the baking time as needed.
  2. You can eliminate the freeze dried strawberry powder if desired. You can also use freeze dried strawberries - simply pulse to a powder in a small food processor.
  3. You can substitute the white chocolate for dark or milk, if preferred.
