I LOVE a good coffee flavored treat – you?

Longtime readers know that there are certain flavors that I favor:

White chocolate.

Malt.

Tahini.

Corn.

And coffee.

ESPECIALLY coffee.

Which is why you’ll see an abundance of recipes featuring those flavors on these pages – and why I’m so grateful that many of you love them too!

it can be a challenge to find coffee recipes that use brewed coffee!

That said, most coffee recipes incorporate instant coffee or espresso powder. Which I totally get – powders are easier to add than liquids, and certainly pack a punch flavor wise.

But when the nice folks at Barrie House (remember them from this recipe?) sent me some more of their delicious coffee to try I wanted to incorporate it into something new and delicious!

The coffee flavor is on point with these blondies, and I’m thrilled with the way they turned out. Even better, they are one-bowl easy and make a nice big batch – perfect if you’re in baking mode for holiday gifting!

Most blondie recipes are a bit too one-note for me. Not these. Lovely coffee flavored, paired with big milk chocolate chips. The texture is fudgy, which is how I like my brownies and blondies, and the milk chocolate pairs perfectly with the coffee in the batter.

These beauties are then topped with a simple two-ingredient glaze, made with (you guessed it) more coffee!

what ingredients do you need?

To make these mocha chip blondies with coffee glaze you’ll need:

  • butter
  • brown sugar
  • brewed coffee
  • egg
  • vanilla
  • flour
  • baking powder
  • kosher salt
  • milk chocolate chips
  • confectioner’s sugar

how do you make them?

Longtime readers ALSO know that I love to minimize dirty bowls whenever possible. And it doesn’t get more minimal than one bowl!

You’ll start by melting the butter and sugar in a heatproof bowl set over a pan of hot water – you’re basically making a makeshift double boiler. You’ll add the remaining ingredients as instructed and then fold in the milk chocolate chips. I like using chips in this recipe because they hold their shape in the oven, so when they cool you get that same snap that they have out of the bag. I love the contrast of the crunchy chip with the chewy blondie here.

Pour the batter into a pan, bake, cool and cut into squares. Wash and dry your bowl and use it to whisk up the glaze, which you’ll drizzle over the blondies. Let set and serve!

Mocha Chip Blondies with Coffee Glaze

Ingredients
  

For the blondies:

  • 1 1/2 sticks, 12 tablespoons unsalted butter, cut into 12 pieces
  • 1 1/2 cups packed brown sugar
  • 2 tablespoons brewed coffee, at room temperature
  • 1 large egg, at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup milk chocolate chips

For the glaze:

  • 1 1/2 cups confectioner's sugar, plus extra if needed
  • 3 tablespoons brewed coffee, at room temperature, plus extra if needed

Instructions
 

Make the blondies:

  • Grease a 9" x 13" baking pan and line with parchment paper. Make sure the paper comes up the sides of the pan for easy removal.
  • Melt the butter and brown sugar in a medium heatproof bowl set over a pan of barely simmering water. Remove from heat, stir in the coffee and let cool to room temperature. Add the egg and vanilla and whisk till combined. Add the flour, baking powder and salt, switch to a rubber spatula and fold the ingredients till incorporated. Fold in the chocolate chips.
  • Transfer the mixture to your prepared pan, smooth the top with a small angled spatula and bake for 20 - 22 minutes. The top should be crackled and shiny. Let cool completely in the pan on a wire rack, then refrigerate till cold, or overnight (this will give the cleanest cuts).
  • Wash and dry your bowl.

Make the glaze:

  • In your now-clean bowl whisk the confectioner's sugar and coffee, adding more sugar or coffee till a thick yet pourable glaze is achieved.
  • Using the parchment paper to transfer the blondie to a cutting board. Cut into 24 squares and separate slightly.
  • Drizzle the glaze over the blondies and let set completely before serving.

Notes

To freeze, make sure the glaze is completely dry. Place in a single layer on a baking sheet and freeze, uncovered. Transfer the frozen blondies to an airtight container or ziploc bag and freeze for up to one month. Defrost in a single layer to maintain the appearance of the glaze.
