3 ingredient sponge cake is a cake you need to meet!

You KNOW I was going to give something called “3 ingredient sponge cake” a try, right? I love the prospect of a recipe that calls for under five ingredients and was intrigued, to put it mildly, at the prospect of an actual from-scratch cake that could be made from only three. And ready in 30 minutes, no less.

If this one really delivered, it would be a perfect last-minute cake to have in my back pocket, particularly since the three ingredients were also ones I always have on-hand (unlike, say, Coke cake).

And so I gave it a whirl!

Much like 2 ingredient Nutella brownies, this cake does NOT rely on beating the yolks and whites separately (a common technique deployed when there are no leavening agents used, to achieve a nice high “rise”). And, like the brownies, it DOES rely on a long beating time – 8 minutes, to be exact. This is what will aerate the batter so don’t skimp!

You also want to do as the recipe instructs and fold the flour into the egg-sugar mixture in three separate additions. Usually I ignore this (because I am impatient), but  you don’t want to deflate that carefully constructed batter, so fold in thirds.

And it’s that simple. The cake baked perfectly with lovely, spongy texture. It is not by any stretch a sweet or rich cake so you will want to adorn it in some manner. And that is completely up to you! You can frost/decorate the top or slice it through the middle and layer with whipped cream, berries, ice cream or buttercream.

I garnished this beauty with some candied orange slices since I had just made them and couldn’t resist. It was a delicious combination, but what I would do NEXT time is also brush the cake with an orange syrup (which I’ve included the recipe for here) before garnishing.

3 Ingredient Sponge Cake

5 large eggs, at room temperature
3/4 cup granulated sugar
1 cup all-purpose flour

Optional: orange syrup (recipe below), candied orange slices

Pre-heat the oven to 350 degrees. Grease a 9″ springform pan and line the bottom with parchment paper.

Place the eggs in a mixer fitted with the whisk attachment and begin whisking the eggs on low speed. Once the eggs are combined, keep the mixer running and begin pouring in the sugar. Slowly raise the speed to high and beat for 8 minutes. The mixture should be very pale.

Use a rubber spatula to fold the flour into the egg-sugar mixture in three additions. Transfer the batter to your prepared pan and smooth the top with a small angled spatula. Bake for 30 minutes.

Let cool in the pan on a wire rack set over a piece of waxed paper for 10 minutes. Use your angled spatula to loosen the cake from the pan before removing, then brush with the orange syrup. Garnish with the candied orange slices and let cool.

Orange syrup: Just before the cake is done, stir 6 tablespoons of sugar with 1/4 cup of orange juice in a small saucepan over medium heat. Stir till sugar is dissolved.

    This looks fantastic and easy. I kind of like the fact that it’s not too sweet to start with. Have not made it yet as I don’t bake too often, but I think I’ll try this one!

    Sounds wonderful. I had ground sugared orange peel. Would you recommend using that as part of the sugar?
