This sweet noodle kugel is definitely one of those dishes that – well, if you know, you know. Like, some of you are probably saying, “I can’t believe she hasn’t posted a kugel till now”. And still others are probably wondering, “Did she add raisins? Cornflakes?” (again, if you know, you know).

And then there are those of you wondering what a kugel EVEN IS.

so what’s kugel?

Simply put, a kugel is a starchy baked casserole, with said starch typically taking the form of either potatoes or egg noodles. From there variations abound, but my hands-down favorite kugel is this very simple, old-school sweet noodle kugel.

And I basically guarantee that if you make it you will LOVE it.

It’s definitely one of those dishes that you don’t think about serving at just any time of the year, but when a holiday rolls around it feels just right – which is why I’m sharing it during this month of Hanukkah (and Hanukkah-adjacent) recipes.

what ingredients do you need to make sweet noodle kugel?

Here’s where it gets a bit “polarizing” – you’ll see recipes that call for raisins, other that top with cornflake crumbs and still others that consider cinnamon-sugar heresy. I stand by this ingredient list!

how do you make sweet noodle kugel?

It couldn’t be easier! While your noodles are cooking, you’ll whisk the eggs, butter, sour cream cottage cheese and some of the sugar and cinnamon in a large bowl. Add the drained and rinsed noodles, toss to coat well and pour into a greased casserole dish. Bake and then top with cinnamon sugar!

If you’re skeptical I encourage you to give it a try – don’t overthink it, try to jazz it up or add a bunch of mix-ins to make it “better”. It’s literally perfect as-is.

Sweet Noodle Kugel

Ingredients
  

  • 16 ounces egg noodles
  • 3/4 cup + 2 tablespoons granulated sugar, divided
  • 1 teaspoon cinnamon, divided
  • 5 large eggs at room temperature
  • 8 tablespoons unsalted butter, melted
  • 16 ounces full fat sour cream
  • 8 ounces cottage cheese

Instructions
 

  • Cook the noodles in a pot of boiling water for 5 minutes - drain and run under cool water.
  • While the water is boiling, pre-heat the oven to 350 degrees and grease a 9" x 13" casserole. Combine the 2 tablespoons of sugar with 1/2 teaspoon of cinnamon in a small bowl.
  • Whisk the eggs, butter, sour cream, cottage cheese, remaining 3/4 cup sugar and remaining 1/2 teaspoon cinnamon in a large bowl. Add the drained noodles and toss to coat. Pour into your prepared pan and cook for one hour. Immediately sprinkle the top with your cinnamon sugar, let sit for 5 minutes and serve. Leftovers freeze beautifully.

You can use regular or gluten-free noodles in this recipe.
