apple “doughnuts” with honey glaze are my new favorite rosh hashanah treat!
OMG with these apple “doughnuts”.
And yes I AM serving up another Rosh Hashanah recipe – because you can’t have enough options, right? And just like those honey cake cupcakes, these are perfect for a small-ish crowd.
Simply core and slice some apples, dip in an easy and quick batter and fry ’em up. You could toss them in cinnamon-sugar but I drizzled with a honey glaze instead, in keeping with the holiday theme.
And I’m not saying you should serve these with a scoop of vanilla ice cream.
But I’m not saying that you shouldn’t.

1/3 cup honey
2 tablespoons light brown sugar
2 tablespoons unsalted butter
1/2 teaspoon vanilla
2 cups vegetable oil
1 large egg
1 cup buttermilk (you can use any milk you have on-hand if you prefer)
1 cup flour
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
3 drops Cinnamon Bark essential oil
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
4 Macintosh apples
In a small saucepan over low heat, cook the honey, brown sugar and butter, stirring till sugar is completely dissolved. Continue cooking for 2 minutes, then remove from heat and stir in the vanilla.
In a large saucepan or deep skillet heat the vegetable oil to 350 degrees*. Set a wire rack over a piece of foil or waxed paper.
In a medium bowl whisk the egg lightly. Continue whisking and add the buttermilk. Add the flour, granulated sugar, cinnamon, cinnamon oil, baking powder and salt. Whisk till smooth.
Trim the apples and core (I rarely advocate for one-use tools but I LOVE this apple corer!). Cut into thick slices (I usually get 4 slices per apple). When the oil is ready dip the slices into the batter, letting the excess drip off, and fry in the oil till golden brown on both sides (do not crowd the pan). Transfer to your wire rack and repeat till all the slices are cooked.
Let cool slightly and drizzle with the honey glaze. Serve immediately.
*No thermometer? No problem. Place an unpopped popcorn kernel in the oil. When the kernel pops the oil is ready!
