But.

A few months ago I sat down with my trainer at the gym, to discuss goals for the coming year. I had just come off 2 doc appointments, where the scale showed a number – both times, dammit! – that I DID NOT LIKE.

I never had a scale in the house, but rather judged my weight based on how my clothes fit. Not the most accurate measure, by any means, but it worked for me. But between having to stop running a few years ago, and my steadily advancing age, there was a definite “shift”. And one that my trainer informed me was not going to be addressed in the gym, but by working with a nutritionist.

I was lucky enough to meet the loveliest local woman who was willing to work with this fruit/yogurt/veggie-averse person, and all I can say is WOW.

I’ve knocked off the weight and I honestly couldn’t tell you the science behind it (I will never understand what a “macro” is), but it has worked. What I DO know is that I’ve dramatically increased my protein intake. Which is how these bars came to be. Joanne has begrudgingly accepted my love of fruit snacks and nightly bourbon, but is relentless is sharing recipes that might trick me into upping my protein intake.

Not every recipe is a winner-winner but this one is – and it’s super adaptable too. The bars are filling, lightly sweet and completely satisfying – there’s no weird textures or flavors and they freeze beautifully.

As I venture further into my “eat more protein” journey I will share any recipes I think you’ll enjoy – and if YOU have any I’d LOVE to know!

Proatmeal Bars
16 egg whites (I can’t get behind liquid egg whites but if you’re so inclined you can use 2 cups)
2 cups quick oats
1/2 cup any milk
4 scoops protein powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup Swerve
any chopped fruit (optional)

Pre-heat the oven to 350 degrees; line a 9″ x 13″ baking pan with parchment paper in both directions, to make a “sling”.

Combine all of the ingredients except the fruit in a large bowl, stirring thoroughly. Pour into your prepared pan and top with fruit if using. Bake for 20 – 30 minutes, or till golden brown. Let cool completely in the pan on a wire rack. Cut into 8 squares.
