but, like, actually GOOD quinoa salad

Even I can’t resist this delicious quinoa salad!

So I found myself with more quinoa.

HOW?????

Well, I know how – I needed it for a client shoot. If you are a longtime follower here you may recall that many years ago I did a mini quinoa series, making this this and this. Oh, and this.

And never made quinoa again.

But now I had another opened bag (albeit smaller, this time) and was super determined to use it up.

And since I’m also in the midst of my “not meh” salad series, why not a salad?

You guys, you NEED to make this salad – it’s delicious and as perfect as a dinner side as it is for a satisfying lunch.

Recipe’s to follow but let’s go over the best way to cook quinoa (so you have a bunch ready for my upcoming recipes!):

1.Rinse 1 cup of uncooked quinoa, to remove the outer coating prior to cooking.

2.Place the quinoa in a pot with 2 cups of water and bring to a boil. Cover and simmer for 15 minutes.

3.Remove from heat and let sit for 5 minutes. Fluff with a fork.

4.Use immediately or divide into 1-cup portions and freeze in ziploc bags for future use.

And now the recipe!

(actually good) Quinoa Salad

1/2 bunch curly kale, stems removed and leaves chopped
2 tablespoons extra-virgin olive oil
1 cup cooked quinoa
1 cucumber, chopped
1 cup cherry tomatoes, halved
2 avocadoes, chopped
1/4 cup chopped parsley
1 lemon, juiced and zested
salt and pepper

Place the kale in a large bowl and add the olive oil. Massage the oil thoroughly into the leaves, coating all sides. At this point you can continue with the recipe or let the kale sit (the leaves will soften as they sit; they won’t wilt).

When ready to serve add the quinoa, cucumber, tomatoes, avocadoes, parsley and lemon zest and toss to coat. Add the lemon juice and toss again. If you need more olive oil add accordingly. Season with salt and pepper.
