I mean, it’s this SUNDAY, you guys. Did you think I was going to leave you hanging without a recipe?

Okay. TBH it had been a while since I made a batch. Or two. And I was so inspired after using those freeze dried strawberries that I couldn’t wait to try them again!
So it was serendipitous that PB&J day was coming up. I immediately thought “Muddy Buddies” and knew that – unlike other recipes out there that mix the flavors together – I wanted the flavors to be separate and distinct.
And the dried strawberries were PERFECT. The fruity flavor was right there, along with the pretty pink hue.
Now for the peanut butter. I swapped out the usual semi-sweet chips for milder white chocolate, and then ramped things up by adding peanut powder to the confectioner’s sugar. This also gave the cereal its pretty pale tan color (and I do like it when things look as good as they taste).
SO PRETTY!
If you’ve never used peanut powder before, you can find it in most grocery stores, right next to the peanut butter. Here’s an Epicurious article with some more recipe ideas!

For the peanut butter Muddy Buddies:
3/4 cup confectioner’s sugar
1/2 cup peanut powder
1/2 cup white chocolate chips
1/4 cup peanut butter
2 tablespoons butter
4 cups Chex cereal (I used Corn Chex)
For the jelly Muddy Buddies:
3/4 cup pulverized freeze dried strawberries
3/4 cup confectioner’s sugar
1/2 cup red melting wafers (see Note, below)
4 cups Chex cereal (I used Corn Chex)
Line two baking sheets with parchment or wax paper.
Make the peanut butter Muddy Buddies: Combine the confectioner’s sugar and peanut powder in a gallon-size ziploc bag. Melt the white chocolate chips, peanut butter and butter in a medium bowl set over a pan of barely simmering water. Remove bowl from heat and add the cereal. Toss to thoroughly coat. Transfer the cereal to the ziploc bag, close and shake to coat all of the cereal evenly. Spread out on one of your baking sheets to set. Wash and dry the bowl.
Make the jelly Muddy Buddies: Combine the confectioner’s sugar and pulverized strawberries in a gallon-size ziploc bag. Melt the red melting wafers in the cleaned bowl, set over a pan of barely simmering water. Remove from heat and add the cereal, tossing to thoroughly coat. Transfer to the ziploc bag, close and shake to coat evenly. Spread out on the other baking sheet to set.
Mix both cereals together and store in an airtight container at room temperature (Note: if you don’t want to use the melting wafers you can substitute with 1/2 cup white chocolate chips and 2 tablespoons butter).
