These white chocolate truffles bring back an old friend – that is, my beloved M&M’s Crispy, which I thought were gone forever!

I was never a fan of straight-up chocolate, always preferring a little “something” mixed in – preferably something crunchy. So I was bummed big time when these guys were discontinued. And clearly I was not the only one, as M & M’s brought these candies back due to customer demand – power to the people!

I couldn’t grab a bunch of bags quickly enough, to start baking (and eating)!

I decided to make a batch of white chocolate truffles – each stuffed with M & M’s Crispy and rolled in nonpareils. I went with white chocolate to offset the rainbow colors of the candy – and because I adore white chocolate. And I loved the idea of a colorful crispy “surprise” hidden inside the smooth and creamy truffles.

I also wanted to create a treat that was quick and easy, yet looked elegant and festive – spring is almost here and after this long, drab winter there is much to celebrate! All the colors!

And truffles are just that. With only two ingredients – chocolate and heavy cream – you are on your way to making simple and mouthwatering ganache truffles.

White Chocolate Truffles

8-9 ounces good quality white chocolate, chopped
1/4 cup heavy cream
1/4 cup (approximate) M&M’s® Crispy

rainbow nonpareils

Place chopped chocolate and cream in a bowl set over barely simmering water. Stir occasionally till melted. Cool to room temperature, cover and place in fridge till mixture is firm enough to scoop but still malleable.

Using a small ice cream or melon scoop, scoop out chilled ganache (about 1/2 tablespoon each). Place 1-3 M & M’s in the center and fold the ganache around to enclose. Form into balls and roll in nonpareils. Chill till ready to serve.

    M&M’s are just the best thing ever.. they are my favourite candy so I definitely would love these little truffles. Wish I had a couple now to devour!
