Welcome back to “Mini Cooks”! MJ, Joy and I have been having so much fun “cooking” up great recipes that are delicious as well as designed to get you and your little ones in the kitchen – together!


Joy’s serving up dinner today, with a recipe that looks as easy as it does amazing!


This enchilada “lasagna” uses tortillas instead of noodles – the kids can help cut the tortillas and layer the cheese. I love this recipe because it takes a typically time and labor intensive dish and simplifies it completely – without sacrificing flavor!

Dinner is probably the most challenging meal to get little ones involved in – so props to Joy for sharing a dish that is quick and easy to assemble. I can’t wait to try it!
