What’s better than toffee crackers? TOFFEE CRACKER COOKIES.

toffee crackers never EVER disappoint!

Longtime readers know that I am a big – BIG – fan of toffee crackers. It started with a Passover dessert, made with matzo, natch, but has over the years morphed into many other delicious versions. And it’s always a win.

what are toffee crackers?

I don’t know where this recipe originated, but here’s the basic formula: lay crackers (think saltines, Ritz, or at Passover, matzo) in a single layer in a sheet pan. Cook brown sugar, butter and vanilla in a saucepan and pour over the crackers. Bake in the oven for a few minutes, then sprinkle with chocolate chips. The heat will melt the chips, which you’ll then be able to spread. Top with some flaky sea salt, chill and break into pieces. Voila!

This salty-sweet, crunchy-chewy treat is truly addictive and checks all the other boxes as well – that is, can be made in advance, serves a crowd, and – best of all – can be endlessly tweaked!

I love riffing on this basic recipe!

Though it’s hard to argue with the deliciousness of the original recipe (though I will forever stand by the superiority of Ritz crackers over saltines), I’ve shared a few variations over the years:

it was only a matter of time before these cookies happened!

A few months ago I was gifted some baking mixes from Miss Jones – and as I can’t leave well enough alone I set about elevating the mixes using some simple tweaks (check this post for what I did with the brownie mix!).

I happened to have some leftover toffee from this post, and I always have Ritz crackers on hand (doesn’t everybody?). It didn’t take long for me to realize that with the chocolate chips already in the cookie mix I had everything I needed for my latest version of toffee crackers!

These were as easy as tossing the toffee and crackers into the baking mix and topping the unbaked cookies with some flaky sea salt.
