So I thought I’d switch things up a bit.
You know, you don’t actually need a popsicle mold to make popsicles. You can use pretty much any kind of vessel or container you’ve got on-hand – paper cups, ice cube trays, even shot glasses, to name a few!
I’d been wanting to make popsicles using a loaf pan, and decided to go for it with these “Cookie Monster” pops:
I also wanted to share a few unique recipes I’ve come across for ice cream, that don’t require an ice cream maker.
This no-churn recipe contains only two ingredients – a can of sweetened condensed milk and two cups of heavy cream – and froze up just like regular ice cream, both in flavor and texture. It was the perfect “base” for the chopped cookies; all that was missing was a healthy dose of blue food coloring!
As you can see, these are not perfectly pristine pops. Next time I’ll line the pan more carefully, and maybe make the slices a bit thinner.

no-churn ice cream from The Kitchn
14-ounce can sweetened condensed milk
2 cups cold heavy cream
blue food coloring
10 Oreos, broken up
10 chocolate chip cookies, broken up
Line a 9 x 5 loaf pan with parchment paper or plastic wrap in both directions, leaving overhang on all sides. Pour the sweetened condensed milk into a large bowl. Place the heavy cream in the bowl of your mixer; add food coloring till the desired shade is achieved.
Whip the cream till stiff peaks form. Fold 1/4 of the cream into the condensed milk, to lighten it a bit. Then add the remaining cream and fold till smooth and fully incorporated (be careful not to overmix).
Transfer half of the mixture into your prepared pan – sprinkle with half the chopped cookies. Repeat with remaining ice cream and cookies; swirl with a knife to incorporate. Cover with plastic wrap, making sure the plastic touches the surface of the ice cream, and place popsicle sticks in at evenly spaced intervals (the easiest way to do this is to make tiny incisions in the plastic with a small sharp knife). Freeze overnight.
To remove the ice cream, run the sides of the pan under warm water and, using your parchment sling to assist, carefully lift your “loaf” out of the pan and transfer to a cutting board. Cut the loaf into even slices and return to freezer till ready to serve.
