Parmesan tuiles are pretty, easy and delicious. And I guarantee that they will become a staple in your kitchen, whether you make them for a quick happy hour accompaniment, cute salad garnish or savory mid-afternoon snack.

I shouldn’t even call this a “recipe” because there is nothing to it – no measuring, no special technique. Simply grate a wedge of Parmesan, pile into circles on a baking sheet and bake.

I like to add a drop or two of essential oil, along with a few sprigs of whichever oil I’ve used. Totally optional but it adds color and a subtle flavor.

You can simply bake, cool and serve OR do one of the following (you’ll need to move fast as soon as they come out of the oven; if the tuiles get too hard to bake, pop the sheet back in the oven for a bit):

1.Drape over a rolling pin or bottle to create a curved shape.

2.Place in the wells of a muffin tin, and use your fingers or a small cup to gently press into the sides and bottoms to form little bowls. Fill with salad.

These are delicious served with drinks, as part of a cheese board or top your favorite soup or salad!

Herbed Parmesan Tuiles

1 – 2 cups finely grated Parmesan cheese (I like to use a microplane for this task)
2 drops essential oil (I used Oregano, Thyme and Parsley – Rosemary and Basil would be nice too!)

Preheat oven to 400; line a baking sheet with parchment paper or a Silpat. If you use parchment paper I suggest spraying the paper with a non-stick cooking spray for easiest removal.

Toss cheese with your choice of essential oil, and place in mounds on your lined baking sheet. Pat lightly to create circles 2-4″ in diameter, and top with a sprig or two of herb.

Bake for 5-7 minutes, watching carefully, till golden. Remove from oven and let sit for 1 minute to firm up slightly. Carefully transfer with a spatula to a wire rack to cool completely.

Can be made up to 3 days in advance – store in an airtight container.
