easy, foolproof cream cheese frosting!

Though I’ve made my share of buttercream frostings over the years (see: here, here and here), it’s not my personal fave. Even this die-hard sweet tooth finds it just SO MUCH.

But cream cheese frosting? NOW we’re talking.

That subtle tang of the cream cheese takes the edge of all that sugar and butter in traditional buttercream, and is THE superior frosting IMHO. And with just 5 simple ingredients and a quick turn in your mixer, it’s one of the easiest, too.

There are, however, a few tips to ensure success – and they truly make all the difference:

1. You want to use block cream cheese, not the whipped kind that comes in a container (save that for your bagels). And no low-fat versions either – the traditional, full-fat block is what we want here.

2. Both the cream cheese and butter need to be at 100% room temperature for the smoothest frosting – even the slightest chill will leave tiny lumps that you will never get out.

3. While I’m not a big “sifter”, I do recommend sifting the confectioner’s sugar here – especially if you’re going to pipe the frosting. Small clumps are inevitable, and a quick sift will take care of that stat.

Cream Cheese Frosting

8 ounces cream cheese, at room temperature
8 tablespoons unsalted butter, at room temperature
1 teaspoon vanilla extract (have you made your own?)
large pinch of kosher salt
4 cups confectioner’s sugar, sifted

Beat the cream cheese and butter till light, fluffy, and completely smooth. Add the vanilla and salt and beat again. Add the confectioner’s sugar and beat at low speed till incorporated. Increase the speed to medium-high and beat till light and fluffy. Use immediately or refrigerate, covered, till ready to use.
