I think you’re gonna love these “Wimbledon” popsicles!
Full disclosure: I am NOT a tennis person. Neither player nor spectator. But I grew up with two tennis-playing, tennis-spectating parents.
So Wimbledon was kind of a big deal.
I could have cared less, and it was only way into my adult years that I even learned that there was an iconic dish associated with this event. Of course I’m talking about strawberries and cream.
Do you know the history of strawberries and cream at Wimbledon? I didn’t, so I did a little research. Turns out there’s nothing truly conclusive, but I did uncover this tidbit (courtesy of headstuff):
Historians point to Thomas Wolsey as the first person to bring Strawberries and Cream to the banquet table in 1509. Thomas would also quite often serve this dish alongside his tennis court to spectators. While it’s a little bit of a mystery as to how exactly this treasured combination got to Wimbledon, we do know that in Victorian England strawberries signaled the beginning of all things summer. A treat for the elite, of course, and something that became a common afternoon tea ritual, we can assume that by 1877 the Wimbledon elite were used to having their Strawberries and Cream, and took their delicacy to the courts!
I, of course, immediately thought popsicles! I mean, it is summer and I love nothing more than a good mash-up.
Especially one that’s this easy.
Seriously. Simply layered pureed strawberries with whipped cream.
That’s it.
They taste just like a strawberry creamsicle!

1 pound strawberries, washed and hulled
4 tablespoons sugar, divided
2 cups heavy cream
2 teaspoons vanilla extract (have you made your own?)
Place the strawberries and 2 tablespoons of sugar in a blender; blend till smooth and transfer to a spouted measuring cup. Wipe out the blender.
Place the heavy cream, vanilla extract and remaining 2 tablespoons of sugar in the blender and blend JUST till it thickens. Transfer to a bowl.
Layer the pureed strawberries and whipped cream in your popsicles molds (this is my favorite mold!). Insert sticks and freeze overnight. To release the pops, hold molds briefly under hot water. Place on a parchment or foil-lined baking sheet and return to the freezer to firm up for a bit.
