Happy Cinco de Mayo!

Now you really didn’t think I was going to make tacos or margaritas, did you?

No, of course you didn’t.

This one flew past my Instagram feed a while back and I couldn’t screen shot it fast enough. Because it’s basically allthethings:

Ritz crackers (This. This. This. This. This.)

Peanut butter (This. This. This. This. This. This.)

Sugar (Umm – my entire blog?)

And I must say, they were even better than I expected.

So if you’re into, say, sweet-salty-buttery-cinnamony-peanutbuttery things, I highly recommend.

And I bet they’d pair beautifully with a margarita.

Ritz Churros

1 stick (8 tablespoons) unsalted butter
1 box (about 9 ounces) Ritz Bits Peanut Butter crackers
1 cup granulated sugar
1 tablespoon cinnamon

Pre-heat oven to 350 degrees; line a baking sheet with parchment paper.

Melt the butter in a microwave safe  bowl or a heatproof bowl set over a pan of simmering water. Remove from heat and add the crackers, tossing gently but thoroughly to coat. Add the sugar and cinnamon and toss again. Place in a single layer on your prepared baking sheet and top with any cinnamon-sugar that was left in your bowl.

Bake for 5 minutes, flip and bake for an additional 5 minutes. Let cool completely and store in a covered container at room temperature.

Note: This recipe would be just as delicious with plain Ritz crackers if you need or prefer to avoid peanut butter.
