Short.
And sweet.
Yes, sometimes the occasion calls for many (MANY) steps. Or many (MANY MANY) ingredients.
But MOST times the occasion calls for two steps.
And three ingredients.
I had an opened jar of Nutella that needed to be used up – and we are not a straight-up-Nutella-eating family, so a recipe was also needed.
And I thought back to that brownie post from a few months ago – would this work for cookies too?
It would.
And I made it so simple that you can commit it to memory RIGHT NOW.
Because when you need a cookie RIGHT NOW you don’t want to have to hunt down the recipe.
I’ve made these with all-purpose flour and both store bought and homemade almond flours and they are ALL delicious.
Short.
And sweet.
Cause I love you guys.
1 cup Nutella
1 cup all-purpose or almond flour
1 large egg
flaky sea salt (optional but NOT)
Pre-heat the oven to 350 degrees; line a baking sheet with parchment paper. Mix the ingredients JUST till blended and drop tablespoon-size scoops onto your prepared baking sheet.
Roll into balls using damp hands and flatten into discs; sprinkle with sea salt if using. Bake for 8 minutes and transfer to a wire rack to cool.
