shortcuts: edible birds’ nests for spring!

So, remember those “creepy crawlers” from Halloween? THAT post is how this post happened.

While standing at the store with the can of chow mein noodles in-hand, I panicked and picked up another one – “just in case” (do you ever do that?). Turned out, one can was plenty and I bookmarked this idea for spring.

And just as easy as those crawlers. Simply melt your chocolate, fold in the noodles and shape into a nest. Pop in a few mini eggs and let set.

I used Cadbury mini eggs and took my cue from the colors in the bag but literally ANYTHING goes. You can use your favorite white/dark/milk chocolate, butterscotch chips, peanut butter chips – you name it.

And if you can get your hands on some gluten-free noodles they’d make a perfect Passover treat too!

“Birds’ Nests”

12 ounces melting wafers or chocolate chips (I used 3 ounces each of yellow, pink, blue and white melting wafers and divided the noodles into fourths)
5-ounce can fine chow mein noodles
mini chocolate eggs or jelly beans

Line 2 baking sheets with parchment paper. Melt the wafers in a bowl set over a pan of barely simmering water. Remove bowl from heat and add the noodles. Toss to gently but thoroughly coat. Scoop into 12 mounds and use a spoon to shape into “nests”. Place a few eggs into each and let set before serving. Store at room temperature in an airtight container.
