These pops are as simple as simple can be – lots of fresh watermelon and lime juice, a bit of sweetener and a dash (or more) of chili powder.
And they’re as refreshing as refreshing can be, perfect for these end-of-August summer days and nights.

5 cups cubed seedless watermelon (from about 1/4 large watermelon)
Juice from two limes
2 tablespoons honey
1/2 teaspoon chili powder (more or less, depending on how spicy you like)
1/2 teaspoon sea salt
In a blender or food processor, puree all ingredients. Pour mixture into popsicle molds and place in freezer. Freeze till slushy, about an hour – add sticks and freeze till solid.
To release the pops, hold molds briefly under hot water.

This flavor combination has me intrigued. I love the spicy sweet combination but never thought to try it with watermelon. On my must try list before the end of summer for sure!
