Happy December all! Hope you’re getting into the swing of the holiday season (is it me, or did it really seem to creep up on us this year?), with a good mix of fun, busyness and family time.
As you know, baked goods are my go-to gift, especially during the holidays. But I know that not everyone bakes, and even I sometimes like to switch it up and give something different than my typical box-of-cookies.
So I’ve gathered up three EASY homemade gift ideas that require no skills beyond pouring, mixing and boiling water. For real. Even better? They’re a little bit different, can be made in advance (get started!) and can be scaled up or down based on the size of your list.

First up is this sure-to-please homemade pancake mix:
You can whip this up using a pastry cutter, stand mixer or food processor. I like the processor best because it makes fast work of the mixing, while still leaving fine crumbs. If you use your mixer just be careful not to overdo it.
Pair a jar of this with a pretty whisk, or a bottle of really good maple syrup – and don’t forget instructions!
“Mix 2 cups pancake mix with 1 cup milk and 2 eggs. Pour a scant 1/4 cup batter onto a hot greased griddle. Cook till golden brown on both sides.”

6 cups flour
3 tablespoons baking powder
1 tablespoon salt
1 cup butter or shortening
Place dry ingredients in your food processor – pulse a few times to blend. Add your butter or shortening and pulse again, till mixture is in fine crumbs. Transfer to an airtight container and store in the fridge for up to 3 months.
