Allison is a licensed dietitian, specializing in pediatric nutrition and women’s health. And needless to say they are both moms!

Now, you may be wondering why I’d be interested in a book focused on the chapter of motherhood that I have long since left behind. But after reading the it (and cooking several of the recipes) I couldn’t NOT share it with you, for a few reasons. One, many of you are still in the thick of new parenthood, and I’m always looking to share the best of everything with you. But more importantly, I was really impressed with both the ease AND sophistication of all of the recipes, making this a keeper for well beyond those early years.

And I couldn’t pick a more perfect example than this delicious steak salad!

The flavors are anything BUT bland and boring – yet not too spicy or “out there” for picky palates. There are plenty of child-friendly ingredients – sweet mango, curly ramen noodles – but this would also be perfect for an adult-only dinner party. And it couldn’t have been easier or more do-ahead – a godsend for any busy parent!

Having bought my share of “mom cookbooks” over the last few decades – both for rounds 1 AND 2 of parenthood – I can honestly say that this is one of the best I’ve come across. Take a look!

Steak and Mango Salad
adapted slightly from The Ultimate New Mom’s Cookbook

6 cups water
3 3-ounce packages ramen noodles, seasoning packets discarded
2 tablespoons sesame oil
3 tablespoons soy sauce
2 tablespoons sweet chili sauce
1 – 3 teaspoons sriracha (optional)
juice from 1 lime
1 ripe mango, diced
3 cups shredded red cabbage
1/2 cup chopped fresh basil
1/2 cup chopped fresh cilantro
1/2 cup chopped scallions (from 4)
1 1/2 pounds flank or skirt steak
1 avocado, diced
sesame seeds

Bring the water to a boil, add the ramen and cook for 3 minutes. While waiting for the water to boil, whisk the sesame oil, soy sauce, chili sauce, sriracha (if using) and lime juice in a large bowl. Drain the ramen, add to the bowl with the dressing and toss to coat. Add the mango, cabbage, basil, cilantro and scallions and toss to coat again. Season with salt and pepper and refrigerate till ready to use (take it out when preparing the steak).

Season the steak with salt and pepper. Grill or saute till medium-rare and let sit, loosely tented with foil, for 10 minutes. Thinly slice against the grain.

Transfer the salad to a serving platter and top with the steak, avocado and sesame seeds.
